Green Apple Curry –Raja Bojun, NZ
This recipe is a great substitute for the Sri Lankan mango curry and best with fresh green or granny smith apples.
Ingredients
- 500g Green Apples (2-3)
- 1 tsp Turmeric
- 1 ½ tsp unroasted curry powder
- ½ tsp black pepper
- ¼ tsp chili powder
- 3-4 tbsp oil
- 6-7 curry leaves
- ½ small cinnamon stick
- 2-3 pods of cardamom
- ½ tsp of cumin
- ½ medium onion cut into small cubes
- 2 cloves of garlic finely chopped
- 1 tbsp of mustard seeds
- 2-3 tbsp of sugar
- ¼ cup of water
- Salt to season
Optional
- ¼ cup of coconut milk
Method
- Wash and cut the apple into medium sized cubes, removing the core and seeds. 2. Coat the cut apples with salt, turmeric, unroasted curry powder, chili powder and black pepper. Set aside to marinate in the fridge for 1-2 hours.
- Heat oil in a medium saucepan or clay pot. Add curry leaves, cinnamon stick, cardamom, cumin, onion, garlic, and mustard seeds. Sauté until the onion turns golden brown in colour.
- Stir the marinated apples with the spices and onion.
- Add water, cover, and simmer on low heat for 10-15 mins until the apples are soft. 6. Add sugar and salt to taste. Best served with yellow spiced rice.
Optional: Add coconut milk if a thicker and less spicy curry is preferred.
